Serge started at 19 years old as a restaurant assistant at the Auberge de l’Ill, then he quickly became Head Sommelier. His expertise has been recognised and rewarded beyond Illhaeusern: Best Sommelier in France in 1983, Best Sommelier in Europe and winner of the Master of Port contest in 1988, and Best Sommelier in the World and UDSF Head Sommelier in 1989.

Vital right-hand man, he supports the chef with passion and loyalty.
